Menemen (Turkish scrambled eggs with tomato and pepper)

The Turkish breakfast classic — eggs scrambled with ripe tomatoes, green peppers and sometimes feta. Eaten with crusty bread for dipping.

Ingredients

  • 2 tbsp olive oil
  • 1 green pepper, diced
  • 2 ripe tomatoes, diced
  • 1 tsp tomato purée
  • 4 eggs
  • 50 g feta, crumbled (optional)
  • Salt, pepper, Aleppo pepper
  • Crusty bread to serve

Method

  1. Heat oil in a small pan. Fry the pepper for 3 minutes until softening.
  2. Add the tomatoes and tomato purée. Cook down for 5 minutes until jammy.
  3. Crack the eggs into the pan. Season with salt, pepper and Aleppo pepper.
  4. Stir gently over low heat until the eggs are just set — you want soft curds, not rubber.
  5. Scatter feta on top if using.
  6. Serve straight from the pan with crusty bread.
