Menemen (Turkish scrambled eggs with tomato and pepper)
The Turkish breakfast classic — eggs scrambled with ripe tomatoes, green peppers and sometimes feta. Eaten with crusty bread for dipping.

Ingredients
- 2 tbsp olive oil
- 1 green pepper, diced
- 2 ripe tomatoes, diced
- 1 tsp tomato purée
- 4 eggs
- 50 g feta, crumbled (optional)
- Salt, pepper, Aleppo pepper
- Crusty bread to serve
Method
- Heat oil in a small pan. Fry the pepper for 3 minutes until softening.
- Add the tomatoes and tomato purée. Cook down for 5 minutes until jammy.
- Crack the eggs into the pan. Season with salt, pepper and Aleppo pepper.
- Stir gently over low heat until the eggs are just set — you want soft curds, not rubber.
- Scatter feta on top if using.
- Serve straight from the pan with crusty bread.
