Ingredients
Chips
- 800 g Maris Piper potatoes
- 1 L sunflower or peanut oil, for frying
Peri-peri seasoning
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp cayenne pepper
- ½ tsp salt
Method
- Cut chips. Cut potatoes into thick 1cm batons. Skin on.
- Soak. Submerge in cold water for 30 minutes. Drain and pat dry.
- First fry. Heat oil to 160°C. Fry for 4 minutes until pale and soft. Drain.
- Second fry. Heat oil to 180°C. Fry for 3–4 minutes until deep golden and crisp.
- Season. Toss hot chips with the peri-peri seasoning in a bowl. Season while hot — the oil sticks better.
Tips
- Hand-cut, double-cook, peri-peri seasoning. That’s the formula.
- Season while hot. The oil sticks better.
- Smoked paprika in the seasoning is the difference.
