Ingredients
Fries
- 800 g Maris Piper potatoes (skin-on)
- 1 L sunflower or peanut oil, for frying
Cajun seasoning
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp cayenne pepper
- ½ tsp black pepper
- ½ tsp salt
Method
- Cut fries. Cut potatoes into 6 mm × 6 mm batons. Skin on. Consistent thickness = even cooking.
- Soak. Submerge in cold water for 30 minutes. Drain and pat completely dry.
- First fry. Heat oil to 160°C. Fry for 4 minutes until pale and soft. Drain.
- Rest. Spread on a tray. Rest 10 minutes (or refrigerate 30 minutes for extra crisp).
- Second fry. Heat oil to 180°C. Fry again for 3–4 minutes until deep golden and crisp.
- Season. Toss hot fries with the Cajun seasoning in a bowl. Serve immediately.
Tips
- Soak the potatoes in cold water first. Pulls out starch for crispier fries.
- Double-cook is non-negotiable. First cook = inside, second cook = outside.
- Hand-cut is the Five Guys way. Frozen fries won’t taste right.
