Lamb and apricot tagine

Slow-braised lamb shanks with dried apricots, almonds and warm spices. The sweet-savoury Moroccan classic.

Ingredients

  • 4 lamb shanks
  • 2 tbsp olive oil
  • 2 onions, sliced
  • 4 garlic cloves, crushed
  • 1 tbsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • ½ tsp ground turmeric
  • 1 cinnamon stick
  • 200 g dried apricots
  • 50 g blanched almonds
  • 1 tbsp honey
  • 500 ml lamb stock
  • 2 tbsp fresh coriander
  • 1 tbsp sesame seeds, toasted

Method

  1. Heat oil in a heavy pot. Brown the lamb shanks on all sides. Remove.
  2. Soften onions for 5 minutes. Add garlic and spices, stir 1 minute.
  3. Return lamb. Add apricots, almonds, honey, cinnamon stick, stock.
  4. Cover and simmer on low for 2-2.5 hours until lamb is falling off the bone.
  5. Stir in fresh coriander. Sprinkle with sesame seeds.
  6. Serve with couscous.
