Ingredients

For the dough

  • 250 g strong bread flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 150 ml warm water
  • 2 tbsp olive oil

For the topping

  • 4 tbsp za’atar
  • 4 tbsp olive oil

Method

  1. Mix flour, yeast, sugar and salt in a bowl. Add water and olive oil. Mix to a soft dough.
  2. Knead 8-10 minutes until smooth. Cover, rise 1 hour until doubled.
  3. Mix za’atar with olive oil to a loose paste.
  4. Divide dough into 4 balls. Roll each into a 15 cm round, ~5 mm thick.
  5. Spread 1 tbsp of the za’atar paste over each round, going almost to the edges.
  6. Bake at 220°C for 6-8 minutes until puffed and golden at the edges.
  7. Serve immediately, ideally wrapped in a tea towel to keep soft.

Tip: No za’atar? Mix 2 tbsp dried thyme + 1 tbsp toasted sesame seeds + 1 tbsp sumac + 1 tsp salt.
