Onion Bhajis-style gram flour fritters

Crispy golden fritters made with sliced onions and chickpea flour. The pub-curry favourite.

Ingredients

Bhajis

  • 3 large onions, sliced thin
  • 200 g gram flour (chickpea flour)
  • 2 tbsp rice flour
  • 1 tsp salt
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds, lightly crushed
  • 1 tsp garam masala
  • 1 tsp chilli powder
  • 2 green chillies, chopped
  • 2 tbsp fresh coriander, chopped
  • 2 tbsp fresh mint, chopped
  • 150 ml cold sparkling water

To serve

  • Mint yoghurt dip (yoghurt + mint + salt + lemon)

Method

  1. Onions. Toss sliced onions with salt. Rest 5 minutes. Squeeze out liquid.
  2. Batter. Mix gram flour, rice flour, all spices, chillies, herbs. Add sparkling water gradually until you have a thick batter (coats the back of a spoon).
  3. Rest. 15 minutes.
  4. Heat. Oil to 170°C.
  5. Fry. Drop tablespoon-sized mounds into the oil. Fry 3-4 minutes, flipping once, until golden and crispy. Drain.
  6. Serve. Hot, with mint yoghurt.

Tips

  • Cold sparkling water in the batter. Lighter, crispier fritter.
  • Rest the batter 15 minutes. The flour hydrates properly.
  • Hot oil. Don’t crowd. Flip once.
