Onion Bhajis-style gram flour fritters
Crispy golden fritters made with sliced onions and chickpea flour. The pub-curry favourite.

Ingredients
Bhajis
- 3 large onions, sliced thin
- 200 g gram flour (chickpea flour)
- 2 tbsp rice flour
- 1 tsp salt
- 1 tsp turmeric
- 1 tsp cumin seeds
- 1 tsp coriander seeds, lightly crushed
- 1 tsp garam masala
- 1 tsp chilli powder
- 2 green chillies, chopped
- 2 tbsp fresh coriander, chopped
- 2 tbsp fresh mint, chopped
- 150 ml cold sparkling water
To serve
- Mint yoghurt dip (yoghurt + mint + salt + lemon)
Method
- Onions. Toss sliced onions with salt. Rest 5 minutes. Squeeze out liquid.
- Batter. Mix gram flour, rice flour, all spices, chillies, herbs. Add sparkling water gradually until you have a thick batter (coats the back of a spoon).
- Rest. 15 minutes.
- Heat. Oil to 170°C.
- Fry. Drop tablespoon-sized mounds into the oil. Fry 3-4 minutes, flipping once, until golden and crispy. Drain.
- Serve. Hot, with mint yoghurt.
Tips
- Cold sparkling water in the batter. Lighter, crispier fritter.
- Rest the batter 15 minutes. The flour hydrates properly.
- Hot oil. Don’t crowd. Flip once.
