Greggs' flaky puff pastry triangle filled with spiced apple compote. The classic bakery pastry.

Ingredients
- 1 sheet ready-rolled puff pastry (320 g)
- 1 egg, beaten
- Demerara sugar, for sprinkling
For the filling
- 3 medium Bramley apples, peeled, cored, diced
- 50 g caster sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tbsp plain flour
- Juice of ½ lemon
- 30 g butter
Method
- Melt butter in a pan. Add apples, sugar, cinnamon, nutmeg, lemon juice. Cook 5 minutes until softened.
- Stir in flour. Cool completely.
- Roll pastry into a 25 × 30 cm rectangle. Cut into 6 squares.
- Spoon apple filling onto one half of each square. Brush edges with egg.
- Fold over into triangles, seal with a fork. Brush with egg, sprinkle with demerara.
- Bake at 200°C for 20-25 minutes until deeply golden.
- Cool 5 minutes, dust with icing sugar if you like.
