Ingredients
For the dough
- 300 g strong bread flour
- 1 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- 180 ml warm water
- 1 tbsp olive oil
For the topping
- 200 g grated mozzarella (or Turkish beyaz peynir)
- 100 g sucuk, sliced (or chorizo/salami)
- 4 eggs
- 2 tbsp butter, melted
- 1 tbsp nigella seeds (optional)
- 1 tbsp sesame seeds
Method
- Mix the dough ingredients. Knead 8 minutes. Rise 1 hour.
- Divide into 4 balls. Roll each into an oval (~25 cm long, 15 cm wide).
- Spread the cheese along the centre. Top with sucuk slices.
- Fold and pinch the long edges in to form a boat shape, leaving the topping exposed in the middle.
- Brush the edges with butter, scatter sesame and nigella seeds.
- Bake at 230°C for 10-12 minutes.
- Crack an egg into the centre of each pide, return to the oven for 2 minutes until just set.
- Serve hot.
