Ingredients
Beef
- 250 g beef mince
- 1 tbsp taco seasoning
Nachos
- 200 g tortilla chips (thick-cut, restaurant-style)
- 200 g cheddar, shredded
- 200 g nacho cheese sauce (jarred)
Toppings
- 4 tbsp sour cream
- 4 tbsp guacamole
- 4 tbsp pico de gallo (fresh tomato + red onion + coriander + lime)
- Pickled jalapeños, sliced
- Fresh coriander
Method
- Beef. Brown the beef in a dry pan. Add taco seasoning and 30 ml water. Simmer 5 minutes.
- Layer. Spread chips on an oven-safe tray. Scatter with cheddar. Drizzle with nacho cheese sauce. Top with the seasoned beef.
- Bake. Grill in the oven for 3 minutes until the cheese is bubbly.
- Top. Add sour cream, guacamole, pico de gallo, jalapeños, fresh coriander.
- Serve. Hot, in the centre of the table.
Tips
- Bake the chips + cheese first. Then add cold toppings. Layering matters.
- Don’t overload with toppings. The chips should still be visible.
- Bake on a tray under the grill for 3 minutes. Hot chips + melty cheese.
