Ingredients

Sub

  • 1 footlong Italian herb bread (or 2 × 6-inch sub rolls)
  • 6 slices pepperoni
  • 6 slices salami
  • 6 slices mortadella
  • 1 small tomato, sliced
  • ½ red onion, thinly sliced
  • Shredded iceberg lettuce
  • Pinch of Italian seasoning (oregano + basil + thyme)
  • Olive oil, to brush

Optional sauces

  • Mayonnaise
  • Mustard
  • Olive oil + red wine vinegar

Method

  1. Prep the bread. Slice the Italian herb bread lengthwise. Brush the cut sides with olive oil.
  2. Toast. Heat a dry pan or grill press. Toast the bread cut-side down for 2–3 minutes until golden and crisp.
  3. Layer meats. Lay the pepperoni, salami, and mortadella evenly across the bread.
  4. Salad. Pile on the lettuce, tomato, and red onion.
  5. Season. Shake over Italian seasoning. Drizzle with olive oil + vinegar if using.
  6. Sauce. Squiggle of mayo or mustard if using. Close the sub, slice in half, serve.

Tips

  • Italian herb bread is the move. Plain white sub bread is sadder.
  • Toast the bread. Cold bread = sad sandwich.
  • Italian seasoning is non-negotiable. The dried herb blend is what makes it taste like Subway.
  • Double the salami if you want the meats to sing.
