Beef and Broccoli-style oyster sauce stir-fry
Tender sliced beef and tenderstem broccoli in a glossy oyster-soy sauce, served over jasmine rice.

Ingredients
Beef (velveting)
- 400 g beef sirloin, sliced thin against the grain
- 1 egg white
- 1 tbsp cornflour
- 1 tsp baking soda
- 1 tbsp soy sauce
Sauce
- 4 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- 200 ml beef stock
- 2 tbsp cornflour mixed with 3 tbsp cold water
Stir-fry
- 300 g tenderstem broccoli
- 2 tbsp vegetable oil
- 3 garlic cloves, sliced
- 1 cm ginger, sliced
- 1 white onion, sliced
To serve
- Cooked jasmine rice
Method
- Velvet. Mix beef with egg white, cornflour, baking soda, soy. Rest 20 minutes.
- Blanch. Drop broccoli into boiling water for 90 seconds. Drain, shock in cold water.
- Sauce. Whisk all sauce ingredients except slurry.
- Sear beef. Wok on max. Add oil. Sear beef in batches, 60 seconds. Remove.
- Aromatics. Add garlic, ginger, white onion. Stir 30 seconds.
- Combine. Return beef, add broccoli, pour in sauce. Simmer 2 minutes.
- Thicken. Stir in slurry. Toss 30 seconds until glossy.
- Serve. Over jasmine rice.
Tips
- Velvet the beef. Baking soda + cornflour + soy = tender.
- Tenderstem broccoli. Regular broccoli falls apart.
- Splash of cornstarch slurry at the end. Glossy restaurant sauce.
